Since becoming pregnant, the biggest tip I have gotten from new moms is to start preparing and freezing meals right away. I had never thought about stocking the freezer before and as soon as I got started, it all made sense! Whether you are expecting or not, freezer meals are a great way to save time and money when you are in a hurry. In the last 3 months, I have prepared and frozen over 15 meals! Here are 5 of my favorite freezer friendly recipes that I have tried to be true and they are very simple and quick to make.Lean MeatloafIngredients2 lbs. 98% lean ground beef1 cup oats2 eggs½ small onion, diced½ green bell pepper, diced2 tbsp. Worcestershire Sauce1 tsp. garlic powderSalt/Pepper to tasteDirectionsIn a large bowl, mix together the ground beef, eggs, and oats with an electric mixer or your hands (I love doing everything by hand!).Next, add in the veggies, Worcestershire sauce, and seasonings. Mix well.Form into a loaf using your hands and wrap in wax paper or plastic wrap. Wrap in tinfoil & freeze.Bake at 350 degrees when ready to cook.Spicy Taco SoupIngredients1 lb. 98% lean ground beef (or lean turkey)1 pk. Spicy Taco seasoning mix1 can stewed tomatoes1 can pinto beans1 can black beans1 can corn1 can poblano peppers in adobo sauce1 can green chilies1 can hot enchilada sauce1 onion, diced2 cups waterSalt/Pepper to tasteDirectionsDump all ingredients into a gallon ziplock bag and freeze.When ready to make, thaw in fridge and place soup in crockpot for 5-6 hours on low.Season to taste.Pot RoastIngredients1-2lb pork roast1 small bag baby carrots, whole2 stalks celery, chopped2 potatoes, cubed1 onion, diced2 cups beef or chicken broth2 tbsp garlic powder1 onion soup packet mixSalt/Pepper to taste when cookingDirectionsPlace roast, veggies, seasonings, and broth into a gallon ziplock bag and freeze.Thaw and place in crockpot for 4-5 hours on High when ready to eat.Season to taste.White Chicken ChiliIngredients1 lb. chicken breasts; cooked & shredded2 cans Great Northern beans1 can white corn1 can diced green chilies2 cups chicken broth2 cans cream of chicken soup1 onion1 packet taco seasoning1 tbsp. cuminSalt/pepper to tasteDirectionsPlace all ingredients into a gallon ziplock bag and freeze.Thaw and place ingredients into a crockpot for 4-5 hours on low when ready to eat.Season to taste.Beef & Bean BurritosIngredients1 pk. whole wheat tortillas1 lb. 98% lean ground beef1 can fat-free refried beans1 pk. Taco seasoning1 onion, diced1 pk. Low-fat Mexican blend cheeseDirectionsHeat ground beef in a large skillet till browned; drain & return to skillet.Mix beef with refried beans and heat on low.Add in taco seasoning & onion.Assemble tacos by placing mixture on the middle of each tortilla. Sprinkle each with cheese.Fold into a burrito, wrap with plastic wrap. Then wrap each burrito with tin foil and freeze in a gallon ziplock bag.Bake at 350 degrees for 15 minutes when ready to consume.
